Roasted Herb Pork Loin

How to make Roasted Herb Pork Loin

  • 4 large potatoes, peeled and quartered
  • 4 lb pork loin roast, boneless
  • 1-2 bags of baby carrots
  • 2 tablespoons olive oil
  • 1 1/2 teaspoon dried thyme
  • 1 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste

Preheat oven to 350 degrees

Boil quartered potatoes for 10 minutes. Drain, allow to cool.

Mix together in a bowl 2 tbs olive oil, 1/2 teaspoon thyme, 1/2 teaspoon garlic powder, salt, and pepper. Toss potatoes and carrots with mixture. 

Mix together 1 teaspoon thyme, 1 teaspoon garlic powder, and onion powder. Salt and pepper to taste. Rub the pork loin with herb mixture.

In a shallow roasting pan, place the roast on the rack and cook for 50 minutes.

Place potatoes around the roast and continue cooking 50 minutes.Roasted Herb Pork Loin

Remove from heat, cover with foil, and let sit 15 minutes before slicing.
